Our Process

The journey begins in the agave fields of Oaxaca, where mature agaves are carefully selected at peak ripeness and slowly cooked in volcanic stone ovens with mezquite wood to develop their natural sugars. The cooked agave is then crushed using traditional methods, naturally fermented in open tanks, and distilled in copper stills or clay pots depending on the expression — resulting in a mezcal that balances ancestral technique with contemporary standards of excellence.
